The ultimate day of Margaritas is right around the corner. I’m talking about Cinco de Mayo! I have a hefty collection of margarita recipes on this website but I felt like we could do with another one. I just love them that much. This Cinco de Mayo margarita recipe is for a Watermelon Hibiscus Margarita. It’s got these mouthwatering floral notes from a homemade hibiscus simple syrup. Crispness from freshly muddled watermelon and it’s all boozed up with silver tequila. It’s our classic margarita recipe jazzed up for spring. Plus do you see this gorgeous pink cocktail hue that, honestly, I’m obsessed with and would fit any Cinco de Mayo party cocktail theme. Let’s get to shaking!
WATERMELON HIBISCUS MARGARITA
I live and die by our margarita recipe. This one doesn’t have a Port float but it’s equally as fancy as our Port of Call Margarita with some adjustments for the watermelon juice. I’m a silver tequila kind of girl but you can swap this for Anejo tequila. It’s going to be a bit smokier, so give it a little extra bit of simple syrup to balance it out.
Into a shaker add in 1/4 cup of watermelon that’s been freshly cut into cubes. Probably around 4 pieces or so. Muddle it until the meat has broken down and been juiced. Add ice to the shaker and pour in 2 ounces of silver tequila, 1.5 ounces of lime juice, and 1/4 ounce orange liqueur, and 1/4 ounce hibiscus simple syrup. Shake for 15 shakes.
Fine strain the cocktail into a double old fashion glass filled with ice. Garnish with additional watermelon.

- 0.5 ounces Orange Liqueur
- 0.25 ounces Hibiscus Simple Syrup

This is just a fun cocktail to drink and is delightfully refreshing in the heat of our Texas spring. If you’re not a fan of orange liqueur you can take it out completely or if you have none on hand, fresh orange juice will do the trick.
