A recipe for a light and easy blush colored cocktail called a Watermelon Gin Rickey made with Tropicana Watermelon.
Lately life has been a whirlwind of the adult kind of busy. You know the kind of busy that involves spring cleaning, selling old items, and repainting our kitchen. I don’t think we’ve officially sat down for relaxation in a month! So when I looked at the date and realized Georgia is only 24 hours from turning 3 years old, I knew we needed to stop what we’ve been doing and make a celebratory drink! Let’s be honest, I feel like she’s been 2 for the last 5 years.
If you’re new here, Georgia is our loveable and goofy red, Irish Setter dog. So while it’s not typical to throw an all out bash for the occasion, it’s not a bad excuse to mix up a cocktail for an impromptu celebration. Since our Georgia is known for loving the following three things…socks, frisbees, and watermelon (seedless and without the rind), I figured I could use one of those to make a cocktail themed to her. So how do you feel about sock flavored vodka?
Ha! Don’t worry, I had Tropicana Watermelon on hand, which I thought would make for a much more fabulous cocktail. Since we’re entering the hotter months of the year, I like my cocktails to be easy to make and refreshingly light. I instantly think of a Gin Rickey to fit that bill. A Gin Rickey is a low ingredient gin based cocktail made with lime juice and club soda. It’s bubbly, light, and heavy on the citrus. Mixing in Tropicana Watermelon just adds a perfect layer of crisp and sweet to this classic cocktail. We all know that feeling of biting into cold watermelon and how your mouth instantly waters? It’s a little like that!
This recipe is easy to make which makes it perfect for anytime celebrations like this!
Into a highball filled with ice you will pour 1.5 ounces of gin, 1.5 ounces of Tropicana Watermelon, and a half ounce of lime juice. Giving it a stir and then topping the rest off with club soda. You can also use sparkling water if that’s what you have on hand!
- 1.5 ounces Gin
- 1.5 oucnes Tropicana Watermelon
- 0.5 ounces Lime Juice
- 5 ounces Club Soda or Sparkling Water
into a highball glass filled with ice add in your gin, Tropicana Watermelon, and lime juice. Give a stir.
Fill the rest of the glass with club soda or sparkling water. Garnish with a lime wheel or watermelon piece.
