Spicy Stuffed Pepper Holiday Lights Appetizer
The recipe makes enough to feed 6-8 people. Since the recipe is super simple, it’s very easy to double for larger parties. Just add two sheet trays of stuffed peppers to the oven and swap them around halfway through the cooking time.
For the peppers, we’ll be using fresh jalapenos and mini sweet peppers. I find the mini sweet peppers near the bell peppers at the store. They usually are already bagged. The mini sweet peppers still have some heat to them but if you have a crowd that loves hot food you can substitute in more jalapenos for mini sweet peppers.
To start the recipe pre-heat the over to 350 degrees F. Then start cooking the hot sausage over a stovetop. For this recipe, I crumble 1/2lb of hot sausage in a skillet over medium to medium-high heat. Cooking until it has browned and there is no pink meat left. I drain the fat and add the hot sausage to a paper towel-lined plate to pat dry.
From there I start with chopping the ends off the peppers (I recommend using food-safe gloves to avoid hot hands). Cut the pepper in half through the thinnest width, creating a high wall boat for the stuffing ingredients. (see photo) Remove any seeds and membrane from inside the peppers.
Arrange the peppers on a sheet tray lined with parchment paper or a silicone non-stick mat. Start filling each pepper with hot sausage being mind full to not overstuff them. Using an offset spatula or the back of a spoon, spread a layer of Heluva Good! French Onion Dip on top of the hot sausage stuffed peppers. Using the French Onion Dip is one of my favorite hacks to getting delicious flavor into recipes with minimal effort. It takes these stuffed peppers to the next level!
Add the sheet tray of stuffed peppers into the oven and let bake for 20 minutes or until you see the peppers start to wrinkle on the sides. When ready, remove from the oven and move to a cooling wrack. Let cool for 5 minutes before serving. Arrange the peppers into a holiday light wreath around a Heluva Good! Buttermilk Ranch Dip on a party platter. You can stack them or leaving in a single layer refilling as needed. Let guests grab peppers and dip in as they please!
