Ahh dough. Is there anything better than fresh, hot dough straight from the oven? Hot melty cheese, you say? Well good thing these Pretzel Pizza Bites have both. Over the last few weeks, I have been trying my hand at a few different recipes. At first I was trying to make Homemade Pizza Bagel Bites. I could never get the bagel part correct and the store doesn’t sell small enough bagels. After that I got pretzels on the brain. Could I stuff pizza toppings into pretzels to make pizza bites? After a quick scan in our many dough books, I sent my husband on the job.
If you follow me on Twitter or Instagram Stories you know by now my husband has turned into a pizza dough nut. He’s slowly starting to develop his own pizza dough recipe. Praise be, he’ll be sharing it on here once he’s got the final kinks worked out. He’s close guys! With all his doughy knowledge he came back to me with the news that “Pizza and pretzel dough are pretty similar. I’m guessing you can cook pizza dough the way you do pretzels.” Well after some testing, he was 100% right. Thus with a little trial error these Pretzel Pizza Bites came into our lives and left even quicker. They are perfect for Game Day, Game Nights, or hosting. Plus they are totally customizable to whatever you love to put on your pizza. So how are they made?
PRETZEL PIZZA BITES RECIPE
It’s very simple to make, especially if you can get fresh pizza dough from your local bakery/bakery counter. If you have your own pizza dough recipe that you like to use, even better. Just stay away from the canned pizza dough! I’m not sure what’s in the canned pizza dough that turns these to mush, but take it from me, it doesn’t work.
You’ll start by rolling out the pizza dough into a 7×12″ spread and then cutting them into 12 long even strips. After that it’s as simple as rolling the pepperoni, cheese, and oregano up into your dough strips. Rotating the dough ball as you roll it to make sure you have fully encased the ingredients. Then you soak them in a boiling water & baking soda bath. Glaze with egg and throw them in the oven. Easy right? Here’s what it looks like.
Using pizza dough to create a pretzel bite that is filled with pizza ingredients like cheese and pepperoni for a delicious appetizer. Great recipe to make with kids.
- 1 pound Pizza Dough room temperature, from your local bakery not the canned stuff
- 3/4 cup Shredded Mozzarella Cheese
- 12 Pepperonis
- 4 cups Water
- 1/2 cup Baking Soda
- Oregano Spice
- Garlic Salt or Course Kosher Salt
- 1 Egg
- 1 tablespoon Water
Preheat oven to 415 degrees F.
Roll your dough out to around 7x12". Cut the dough into 12 evenly sized strips.
Taking a strip of dough, at one end of the strip add 1 pepperoni, tablespoon of shredded cheese, and a sprinkle of oregano spice. Begin to roll the dough up, rotating* the dough twice before coming to the end. Make sure you've sealed all the sides of your ingredients. Give the dough ball a roll in between your hands to smooth and round it out. Add to a slipmat or parchment lined cookie sheet. Repeat 11 more times.
*If the cheese falls out, stuff it back in the exposed side on the first rotation.
In a pot bring the 4 cups of water to a boil. Once boiling drop the heat to medium and add in the baking soda. Stirring as you add it in to keep the mixture from foaming up. Keep stirring until the baking soda has dissolved. Raise the heat back up and bring the mixture to a boil.
3 - 4 dough balls at a time, drop them in the boiling water. Removing them after 30 seconds and adding them back to the cookie sheet. Repeat until all dough balls have been soaked.
In a small bowl whisk the egg and tablespoon of water together to make a glaze. Brush it on top of your soaked dough balls. Sprinkle Garlic Salt (or coarse Kosher Salt) on top of your dough balls. Add the cookie sheet to the oven and let cook for 15-20 minutes. They are done when they have a deep brown golden color.
Serve your Pretzel Pizza Bites warm and with a side of marinara sauce.
These bites are ahhhh-mazing. Crunchy outside, soft pretzel inside, and gooey pizza middle. The key to this recipe is the use of pizza dough. It just makes for a fantastic texture that’s better than using crescent rolls or bagels. Another thing I learned many years ago from all the Pizza Bites and Pizza Pockets I had as a kid, scorching hot tomato sauce is not a joke. So I leave it out of the center to avoid mouth burns and instead serve marinara sauce on the side for dipping.
