Irish Coffee, it’s one of my favorite St. Patrick’s Day drinks…that is occasionally drunk at Christmas too. It’s hot coffee, Irish Whiskey, and sugar that is then topped with whipped cream. Some people might just put a little heavy cream on top but I’ll take any reason to open a bottle of whip cream and spray it into my mouth. Anyone else?
With this being the weekend of some Irish drinking I thought it would be fun to turn my favorite Irish drink into a St. Patrick’s Day adult treat…a jello shot. They are super easy to make and since the weather is warmer a great way to have a hot cocktail in a cold form. Plus they are a little bit of a pick me up if you’ve been pinched too many times for forgetting to wear green. Here is how to make them:
HOW TO MAKE IRISH COFFEE JELLO SHOTS
To make the Irish Coffee jello shots you’ll need 1-1/2 cups of coffee at room temperature or chilled. I usually use cold brewed coffee for a stronger coffee flavor and…it’s already cold.
In a saucepan, you’ll pour in 1-1/2 cup of coffee and then sprinkle 1-1/2 packets of Knox Powdered Gelatin on top. Don’t skip on the Knox brand. Off-brand never comes together the same and the consistency will be different. Let it sit to bloom for 2 minutes. Take your saucepan to a stovetop and over medium-low heat stir the mixture until the gelatin has dissolved. Let it come to a simmer, then remove from heat. Let sit for two minutes before pouring in and stirring 1/2 a cup of Irish Whiskey.
Pour Irish Coffee mixture into disposable gelatin/portion control cups. Let harden in the fridge for a minimum of two hours.
When ready to serve, top with whip cream! It’s so easy, isn’t it?

- 1-1/2 cup Coffee (room temperature or cold)
- 1/2 cup Irish Whiskey
- 1-1/2 packets Knox Powdered Gelatin
- Canned Whip Cream
Pour the 1-1/2 cup of coffee into a medium saucepan. Sprinkle the Knox Powdered Gelatin over top and let sit for 2 minutes to bloom.
Turn on heat to medium-low. Stirring until the gelatin dissolves. Bring to a simmer and then remove from heat. Let cool for 2 minutes.
Stir the 1/2 cup of Irish Whiskey into your coffee jello mixture.
Pour the Irish Coffee jello mixture into disposable portion cups. Let chill in the fridge to harden for a minimum of 2 hours.
When ready to serve, top with whip cream and serve!
If you use cold brew coffee you may be buzzing a little bit after a few of these, so take it easy! Though I guess that makes them a bit like red bull and vodka doesn’t it?
