Happy First Day of Spring! With the change of the season I felt we should celebrate and have a little fun doing so. With those blustery blues escaping away to open up for the beautiful light purples and pinks of spring. I wanted to have a little cocktail experimentation fun and create a color changing cocktail that could morph from winter to spring with us by using b'lure Butterfly Pea Extract. This Spring Fever martini will not only be a feast for your eyes but give your taste buds floral notes of delicious Elderflower and the sweetness of strawberry and peach. I think it's perfect for a garden party or a fun cocktail event! So class, open up your science books, we're going for another cocktail experiment!
So how do we make a color changing cocktail? Today we're using butterfly pea flower extract. Specifically, b'lure Flower Extract from Wild Hibiscus Co. You'll remember the company from my New Year's Eve post. Butterfly Pea Flower is a Thailand flower that can be dried out and still hold their blue color. Which allows them to be turned into an edible extract for food coloring!
So where does the color changing come in? When you mix acids with the extract it changes the color from blue to purple to pink. The more acid in a fruit or substance the closer to pink you get. For this cocktail I'm using lemon juice for a lavender/pink finish but you could use even more lemon juice to hit a much bright pink coloring. I just loved this purple, it really reminded me of my favorite spring tulips.
This martini is a delight of strawberries, peaches, elderflower and lemon that is refreshing like the spring sun is. It's for sure going to give you all the spring fever vibes you can handle! Since we want to change the color of the cocktail after it's been poured, we're going to wait to add our acid to this recipe till the end. I also choose to add the b'lure Butterfly Pea Flower extract after the cocktail has been poured so I can see the color change, however you can add it into the cocktail shaker before you shake it.
Into a shaker filled to the top with ice add in strawberry vodka, peach schnapps, simple syrup, 6-7 drops of b'lure Flower Extract and elderflower liquor. Give it a hard shake for 20 seconds. Strain your blue cocktail into two coupes or two martini glasses, it will give you enough room to fill the drink with the lemon juice without overflow. In a shot glass add 1.5 ounces of lemon juice and serve along side your Spring Fever Martini. When you're guest are ready slowly pour in the lemon juice and watch as the drink morphs colors right in front of you. Sip and enjoy!
- 4 oz Strawberry Vodka
- 1 oz Peach Schnapps
- 1 oz Elderflower Liqueur
- 1 oz Simple Syrup
- 6-7 drop b'lure Butterfly Pea Flower Extract
- 3 oz Lemon Juice
Don't they look like gorgeous spring flowers? This cocktail is just a blast to create and even more fun to see in person. A lot like my Black Magic cocktail where the fun is not only in the sipping but also how the drink comes alive.
