This recipe is for an easy last minute snack made with TRISCUIT Originals, Lime, Mango, The Laughing Cow® Creamy Spicy Pepper Jack Cheese and a Jalapeno Balsamic Glaze.
I am so excited to be getting into the full swing of summer entertaining now that it's the end of May. I just love the colorful fruits and veggies that come out of this active season. Especially with my husband's garden growing strong, I'm already loving all of the variety of flavors I've gotten to mix up. For example, the other weekend I found myself in a bind! We were invited out to a BBQ super last minute and I really needed a quick recipe to bring. Off to the kitchen I went to create something new and out came these Limangojackscuit drizzled in a Jalapeno Balsamic Glaze. It's a delicious balance of spicy cheese, sweet glaze, and fresh fruit! Sounds fancy and super complicated, doesn't it? Nope, this is easy as slice, dollap, and sprinkle!
What is a Limangojackscuit? It's a TRISCUIT Original layered with The Laughing Cow® Creamy Spicy Pepper Jack Cheese, a mango slice, and the zest & juice of a lime. To top it off I drizzle my Jalapeno Balsamic Glaze over it for an extra spicy but sweet kick! I typically have TRISCUIT Crackers in the pantry at any given moment for last minute guests I need to entertain or when I have a handful of toppings I want to experiment with like slices of exotic fruit, a dollop of homemade sauce or a sprinkle of fresh herbs. They're my Make ‘Scuit Happen anywhere, anytime food, which was perfect for a moment like this!
To make these Jalapeno Balsamic Drizzled Limangojackscuits you'll need to start by making the glaze. It's super easy to make and I make it ahead of time to drizzle over all sorts of snacks! Into a pot you'll add half a de-seeded jalapeno (if you like things spicier then add a whole cut in half!), balsamic vinegar, and sugar. You'll want to bring all of this to a simmer and let it reduce down and thicken. It takes around 8-12 minutes to do so. Once simmered, remove the jalapeno and let cool in a jar.
After that the fun of topping begins! You'll take 12 Original TRISCUIT Crackers and spread The Laughing Cow® Creamy Spicy Pepper Jack Cheese over it. Then you'll add on your mango and zest from a lime. When ready to serve just drizzle over top lime juice and the jalapeno balsamic glaze. It's spicy from the cheese, sweetness from the mango, and acid to round out the flavors from the lime. It's a flavor explosion of a snack!
- 12 TRISCUIT Crackers
- 3 wedges The Laughing Cow® Creamy Spicy Pepper Jack Cheese, softened
- 12 small fresh mango slices
- 1/2 lime Zest and juice, divided
- 1/2 Jalapeno deseeded
- 1/2 cup Balsamic Vinegar
- 1 Tablespoon Sugar
Into a sauce pan add in your vinegar, jalapeno, and sugar. Bring to a simmer and let it simmer until it reduces down by a 1/3. About 8-12 minutes. Remove from heat, remove jalapeno, and pour into a jar and let cool. Close with a top and it stays good in the fridge for 3 weeks.
Jalapeno Balsamic Drizzled Limangojackscuit
To make, spread cheese on the crackers. Top each cracker with a mango slice and lime zest. Then lightly drizzle lime juice and jalapeno balsamic glaze over the crackers. Serve right away.
If making ahead of time add lime juice and jalapeno balsamic glaze right before serving.
Needless to say these were a hit at the BBQ! Everyone loved that they were something different and I loved how quick I could whip them up when I want to make 'Scuit happen. Win, win, right?
