April showers bring May red roses, floppy hats, and the sweetest sips one can have. I’m talking about how the Big Race is right around the corner! If you’ve ever been, you know there is nothing more exciting than the thundering claps of the horses running by. Okay, maybe all the themed cocktails are equally as exciting. While I won’t be in attendance this year, I will be hosting a DIY Floppy Hat Party while we watch the Big Race. It’s not a party without a signature cocktail and this year it’s the Winner’s Circle Cooler.
This Winner’s Circle Cooler is something of a hybrid of a Greyhound, Mint Julep, and beer cocktail. It’s got whiskey, an amped up mint simple syrup, and grapefruit juice. I top it off with Corona Light to give a refreshing, light, and smooth finish. I thought using Corona Light was fitting as Corona Extra® is the Official Import Beer of the Kentucky Derby® for 2018 and 2019, which occurs over Cinco de Mayo weekend for the next two years. What’s more appropriate than sipping the Official Import Beer of the race? This cocktail is citrus, hoppy, and minty deliciousness. It’s perfect for sipping in the hot sun or under a fan in your living room. You’ve got to try it!
HOW TO MAKE THE WINNER’S CIRCLE COOLER
Let’s start with the mint simple syrup. For this recipe, I make a strong flavored mint simple syrup. This helps keep it a main flavor to the cocktail while up against grapefruit and beer. If you are someone who likes a subtle mint taste, then cut the amount of mint used in this recipe in half. You can also get away with buying premade mint simple syrups in this case as well.
To make this strong mint simple syrup, start by adding 1 cup of water and 1 cup of sugar to a saucepan over medium heat. Stir until the sugar has completely dissolved, giving you a slightly thick and clear consistency. Remove from heat immediately. Add in 3/4 cup of fresh mint leaves and let steep until cool. Once the pot cools, remove the mint leaves from the simple syrup. Add the simple syrup to a jar with an air tight lid. Keep it in the fridge for up to 1 month.
This cocktail goes in a 16 ounce pint glass. From here, add a bar spoon into the pint glass. Fill the pint glass with a lot of ice, preferable to the top. Add in your whiskey, mint simple syrup, and grapefruit juice. Give it 10 stirs with the bar spoon. Then top off with your Corona Light and give it another 4-5 slow stirs. Garnish with straws and leftover mint! I pull for Corona Light in this cocktail because it’s a light beer full of flavor with only 99 calories. In those hotter months, I pull more towards drinks that fit in the light category. With Corona Light being a golden light pilsner-style lager that’s sessionable yet refreshing with a smooth taste and distinct hop flavor, it fits my kind of spring and summer beer sipping.

- 1.5 ounces Whiskey
- 4 ounces Grapefruit Juice
- 1 ounce Mint Simple Syrup
- 6 ounces Corona Light® Beer
Fill a pint glass with lots of ice. Add in your whiskey, mint simple syrup, and grapefruit juice. Give it 10 stirs with the bar spoon. Then top off with your Corona Light and give it another 4-5 slow stirs. Garnish with straws and leftover mint.
The word crisp fits this cocktail to a T. I can imagine sipping it with a big floppy hat on in the sun or at home with some of my closest friends. Now I’m off to shop for hat crafting supplies!
