A few weeks ago we celebrated my husband’s birthday with a BBQ. My husband is hands down an ice cream cake lover over traditional birthday cake. I’ve been around to help throw 10 of his birthdays and 10 ice cream cakes have been involved! While in the beginning I use to make my own, over the last few years I’ve used I Love Ice Cream Cakes instead, because they offer tasty, ready-to-serve ice cream cake treats that you can pick up on your weekly grocery store run. Basically I get to cut out time making one or an extra trip out. I’ll even pick one up when we are just hanging by the pit grilling up some burgers with friends as a just because. It never fails though, we always end up with leftovers and wondering what to do with leftover ice cream cake? I’ve finally found a solution and it’s Mocha OREO® Ice Cream Sandwiches! These no chill cookies are chocolaty and espresso goodness that are crisp on the outside but soft on the inside. They whip up quickly, which makes it easy to put together for next day entertaining or just to because!
MOCHA OREO® ICE CREAM SANDWICHES
My husband loves OREO® anything so we often reach for the OREO® Premium Ice Cream Cake. It’s vanilla-flavored ice cream blended with OREO® cookie pieces, plus whipped icing topped with a large OREO® cookie wafer and topped with OREO® cookie pieces. So really this recipe is cookies inside cookies inside ice cream cake! It’s a lot of fun. Here is how we make the ice cream sandwiches with it.
Since this is a no chill cookie dough recipe, it comes together pretty quickly. The KEY to these cookies is using melted butter that is not super hot. Just barely melt the butter and then let it cool off before starting to make your cookies.
You’ll then pre-heating your oven to 350 degrees. I like to combine my dry ingredients first that way I don’t have to worry about it later. Into a mixing bowl will go flour, unsweetened cocoa powder, espresso powder, baking soda, and salt. Give it a little mix to combine and set aside.
Into a stand mixer you’ll beat till smooth the melted butter and white sugar. You want it pale and creamy. After that mix on low, a large egg and vanilla extract into the butter mixture. From there you’ll slowly add in your dry ingredients and let it mix until you get a crumbly dough. Right before removing from the stand mixer mix in a few mini chocolate chips.
On a lined baking sheet scoop 12 cookies out from your doll. Rolling them and placing them 2 inches apart from the others. Add them to your oven and cook for 10-12 minutes. Remove from oven and let cook ON the baking sheet for 15 minutes.
Meanwhile take half an OREO® Premium Ice Cream Cake or 6 servings/slices of any other I Love Ice Cream Cakes. They come so many different styles and sizes, including original Carvel®, Jon Donaire® and OREO®. Which means you can really customize this recipe to what you and your family love. Add it to a mixing bowl and slowly fold the ice cream cake into itself. Mixing all the toppings and ice cream together. You don’t want it melting so add it back to the freezer to sit while you wait on your cookies to cool.
Once the cookies are cooled add a scoop of ice cream from your mixture to the flat side of one of the mocha cookies. Taking another mocha cookie place it on top of the ice cream giving it a little push down to form a sandwich. If you want a cleaner edge just run a butter knife around it. There you have it!
A recipe for no chill chocolate and espresso cookies that you sandwich around leftover OREO® Premium Ice Cream Cake for an easy summer dessert idea and great way to reuse leftover ice cream cake.
- 1/2 OREO® Premium Ice Cream Cake from I Love Ice Cream Cakes (6 servings)
- 8 tablespoons Unsalted Butter (melted and cooled)
- 1/2 cup White Sugar
- 1/4 cup Light Brown Sugar (packed)
- 1 teaspoon Vanilla Extract
- 1 Large Egg
- 1-1/2 cups Flour
- 1/2 cup Unsweetened Cocoa Powder
- 2 teaspoon Espresso Powder
- 1/2 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1/2 cup Chocolate Chips
Pre-heat oven to 350 degrees.
In a large bowl combine together your dry ingredients. Flour, cocoa powder, espresso powder, baking soda, and salt. Mix until just combined and set to the side.
In a stand mixer on low the melted butter and white sugar together until pale and creamy. Butter should be slightly warmer than room temperature before using. Add the large egg and vanilla extract mixing until incorporated.
Slowly add in your dry ingredients from earlier. Mix until you get a crumbly dough texture. Add in your chocolate chips and mix for 10 more seconds.
Using a spoon scoop out 12 cookies. Rolling them into balls and spacing them 2 inches apart on a greased or lined baking sheet. Add to the oven and bake for 10-12 minutes.
Remove from oven and let cool on the baking sheet for 15 minutes.
When ready to assemble remove the OREO® Premium Ice Cream Cake from I Love Ice Cream Cakes from the freezer. Slice into 6 pieces and add to a mixing bowl. Using an ice cream scoop mixing around the ice cream cake to combine it into more of a singular ice cream form.
Scoop one scoop of the OREO® Premium Ice Cream Cake from I Love Ice Cream Cakes mixture from the bowl and place it on the flat side of a mocha cookie. Taking a second mocha cookie place it on top of the ice cream to form a sandwich. Repeat until you have 6 ice cream sandwiches.
Serve immediately or add back into the freezer for later eating.
