I’m not sure where you live but here in Texas, August is the month most people dread. With temperatures that can hit well above 100 degrees and humidity that rises above 80% before 9AM, August is one hot month. It’s almost cruel one can say. That’s why I’m beating the heat today with this Cruel Summer cocktail that is light, bubbly, and fruity to help combat these scorching hot days.
Two things I love about this cocktail are it is low in alcohol making it perfect for sipping in the heat and it only require 4 simple ingredients. All into your rocks glass full of ice goes white rum, coconut sparkling water (I use La Croix), lemon juice, and strawberry syrup. Back in February I taught you how to make your own strawberry syrup for our Strawberry Champagne cocktail. However if you’d like to buy a store brand one, I recommend this one from Torani. It’s not too thick which allows for it to blend into a cocktail easier. After that give it a stir and enjoy. Sometimes when it gets to hot, it’s best to make things less complicated. So an easy summer cocktail made from rum is the perfect answer to that.

- 1 ounce White Rum
- 0.5 ounces Strawberry Syrup
- 0.5 ounces Lemon Juice
- 5 ounces Coconut Sparkling Water
Rest a bar spoon into a rock glass and fill with ice. Add in your white rum, strawberry syrup, lemon juice, and coconut sparkling water. Give it a stir with your bar spoon to combine the ingredients. Remove spoon and serve.
I love that this cocktail isn’t overpoweringly sweet. It’s just got hints of sweetness to make it light on the taste buds. Plus with the coconut it holds a little tropical vibe to it. Making it a perfect aid to this cruel summer.
