Happy First Day of Fall, yall!
It's been almost 8 years since I met my husband back in my first fall semester of college. It feels like it's been a whole other lifetime ago. It's amazing how certain things can bring back memories and make them feel like yesterday, though. Like, back when I first met Brad a lot of our dates involved making iced coffees and walking to class together in the fall. Even though Brad is a huge coffee guy, he had never had iced coffee until I came around. Now I've got him drinking it year round. I just love the way coffee gets that lovely bite to it when it's cold and if you're like me and love flavored coffee, it's always better on ice. I did learn quickly that Brad will always make his black but proceed to drink half of my flavored one. He still does this to this day.
In an effort to do something for one of our dates to class, I decided I wanted to make him muffins to eat on the way. Except since this relationship was still new, I really wanted it to be impressive. Let's all take a giggle at that, now. My idea was to capture all our favorite things about fall into one muffin. A task that at its time felt overwhelming but in the end turned out perfectly. I, of course, had to have pumpkin and pumpkin spices into it because it's a huge part of fall for us. I also wanted coffee and chocolate because as we learned Brad secretly loved those things together in my drinks.
After some trial and error, I successfully came up with my now infamous Pumpkin Mocha Chip Muffins. They are spicy, sweet, and energized with coffee. Back then I made them with my iced coffee with cream because it makes these incredibly moist and tasty treats. Now I use fridge friendly International Delight Iced Coffee because it's way more convenient than making my own or going out to buy it. Plus it's super yummy for not just pouring over ice but also cooking with. It adds so much delicious flavor.
I'll never forget him unwrapping one and biting into it and his face lighting up like a jack-o'-lantern. They were still warm from the oven and oozing chocolate chips. Needless to say, I brought two for each of us but ended up giving him my second because he loved them so much. It never fails that when I make these now, one bite and I'm brought back to being 19 years old, hot Texas fall days, and being madly in love with this goofy man over iced coffee and pumpkin mocha chip muffins.
For this recipe, you will need canned pumpkin, eggs, International Delight Pumpkin Pie Spice Iced Coffee, melted butter, flour, baking powder, baking soda, pumpkin pie spice, sugar, and chocolate chips.
You will want to start off by combining all of your dry ingredients together in a large mixing bowl. Then in a second mixing bowl combine your wet ingredients and mixing until well combined. After your wet ingredients are combined you will want to slowly add your dry ingredients to your wet. I add in a 1/2 cup of dry ingredeints at a time with the mixer on a low-medium speed, occasionally stopping to scrape down the sides.
Once combined, add in your chocolate chips and hand fold them in. We want to try to avoid over mixing our batter. When the chips are mixed in, pull out your muffin tray. You can line them with cupcake/muffin cups or grease the pan with a cooking spray. Using an ice cream scoop or measuring cup add the batter to your muffin pan. Then add to an oven at 350 degrees for 20-25 minutes. You will know they are done when you poke a toothpick in your muffins and it comes out clean.
I move them to a cooling rack and let sit until cool. After that eat them all up or save them in the refrigerator for 5-7 days.
- 1 cup Pureed Pumpkin
- 1/2 cup International Delight Pumpkin Pie Iced Coffee
- 1 3/4 cups Flour
- 1/2 cup Sugar
- 1/4 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 cup Melted Butter
- 2 Eggs
- 2 tsp Pumpkin Pie Spice
- 1/2 cup Chocolate Chips
I love making these muffins in the mornings and having them fresh out of the oven. I'll serve them up alongside my other favorite International Delight Iced Coffee, Caramel Macchiato. There is something delicious about warm baked goods with cool coffee. I also like how convenient it is to have flavorful iced coffee already ready at home in refridgerator. I just pour over ice and enjoy right away. It's the same coffeehouse house taste that I can enjoy at home in my PJs.
