Last week I talked about how you need the beach in your life and the many reasons why. As we packed up our bags to head out to Cameron, Louisana for a weekend at the sandy shores I knew I wanted to make a cocktail for the beach vibe of the weekend. When I think of the beach I think of delicious flavors like coconut, pineapple, and mangos. When it comes to beach liquors rum is the first thing to comes to mind. Not to mention the beach is fun, and there is something about getting a fancy cocktail on the beach that makes the entire experience.
One of my favorite beach memories is when we headed off to Hawaii back in 2010. We sat in white sand drinking Lava Flows out of coconuts and eating pineapple until we had sores in our mouth. It’s one of my favorite memories in our relationship. That’s the type of feel I wanted to embody in this cocktail we’re about to make.
Playing off a Bermuda Rum Swizzle I’m making a rum punch to serve in hollowed out pineapples for a fun and sweet beach vibe. I’ve even taught you how to hollow them out here! With delicious pineapple, orange, lime juices and balancing bitters it all levels out to a perfectly balanced punch. However, we’re in the bayou so you know I had to add a cajun kick. Instead of using dark rum we’re going to switch it out for Bayou Satsuma Rum. This local rum is sweetened perfectly with Lousiana satsumas that give this punch a fun new kick to a typical rum swizzle. To make it extra refreshing you can use fresh ingredients like juicing the pineapple you hollow and fresh limes. I hope this cocktail is just as much fun as delicious. Plus it’s perfectly themed for your next luau or laying by the pool! Life is a beach!
- 4 ounces White
- 4 ounces Bayou Satsuma Rum
- 5 ounces Pineapple Juice
- 5 ounce Orange Juice
- 2 ounces Lime Juice
- 5 Dashes Angostura Bitters
- 6 Strawberries
- In the bottom of a shaker add your strawberries and lime juice. Muddle them until the strawberries are just pulp. Using a strainer, strain it to the bottom of your punch bowl/pitcher. Then add in your two rums, pineapple juice, orange juice, lime juice, and bitters. Then add ice to above the liquid line and stir until fully mixed. Serve in rocks glasses or hollowed out pineapples. Garnish with leftover strawberries and pineapple.
