I was in the car the other day with my husband discussing how I needed a Valentine's Day cocktail and for some reason my brain was just lacking in what to come up with. As if Dionysus, himself, decided to help a girl out. Bruno Mar's "That's What I Like" popped onto the radio & with it's catchy "..strawberry champagne on ice..." I knew what I had to do. I had to make a Valentine's Day cocktail with strawberry champagne. 

Well, now I have a few questions for Mr. Mars. After some research I discovered that there is no actual, Strawberry Champagne. What are you putting on ice then, Bruno? Listen I'm not here to judge if you're trying to fancy up a bottle of Boone's Farm Strawberry Hill. I went to college, I know the effects of downing the whole bottle chased by a Bud Light. However, you rang the bell for the Champagne Campaign and you can't give me an $8 bottle of Andre Strawberry Moscato in return. So now that you've gotten all of our hopes up to finally have Strawberry Champagne I'm going to have to wing woman in for you and fix this little ordeal. So let's make our own Strawberry Champagne....the way I like it.

To make this cocktail we will be making our own Strawberry simple syrup. You guys know I have a past love with making different types of simple syrups so this should come as no surprise. If you want to for-go making your own you can totally buy Torani Strawberry Syrup to sub in. If you do this skip to the *.

To start you'll want to take 1/2 lb of sliced fresh strawberries and 1 cup of water into a sauce pot. You'll want to bring it up to a boil, then back down to a simmer. Removing any foam that forms on top and discarding it. You're going to let this sit until the strawberries have lost most of their color, so about 10-15 minutes. Remove it from the heat and carefully, into a heat safe container, strain the strawberry water through a sieve. Discard the strawberry left overs or save them to mix into yogurt in the mornings as they are still good.

After this add your strawberry water back into your sauce pot & add in your sugar, over a medium heat. Bring to a simmer and let the sugar fully dissolves, about 3-5 minutes. Remove from heat when the sugar is dissolved and transfer your strawberry simple syrup back into a heat proof container and let it come to room temperature before using.

*Now comes the easy part! Into a 6 oz champagne flute add in 1/2 oz of strawberry simple syrup (or Torani Strawberry Syrup) and then fill the rest of the glass with champagne. I like using Rosé champagne to give it an extra nod for Valentine's Day but you use whatever you love best. Serve immediately and enjoy your Strawberry Champagne. It's crisp, sweet, and has a hint of strawberry.

Strawberry Champagne
Easy cocktail for Strawberry Champange using homemade flavored simple syrup with bubble poured on top.
Ingredients
  • 1/2 lbs Sliced Fresh Strawberries
  • 1 cup Water
  • 1/2 cup White Sugar
  • 750 mL Bottle of Champagne (Rose or Brut)
Instructions
Strawberry Simple Syrup*

In a sauce pot bring strawberries and water to a boil, then down to a simmer until the strawberries have lost most their coloring. About 10-15 minutes. Remove and discard any foam that comes to the top of the mixture. Once the color is almost gone from the berries, remove from heat and strain mixture through a sieve into a heat safe container. Add the strained mixture back into your sauce pot along with your sugar. Brint it to a simmer until the sugar has completely dissolved. Remove from heat, add back into a heat safe container, and let come to room temperature before using.

Strawberry Champange

Into the bottom of a 6oz champagne flute add 1/2 ounce of strawberry simple syrup. Top off the glass with champagne, garnish with strawberries, and serve immediately.

*Can sub in Torani Strawberry Syrup, instead of making your own.

It's amazing how you can grab inspiration from anywhere and let's be honest, Bruno Mars has some of the catchiest tunes you could play for Valentine's Day.
